Leftover Thanksgiving Shepherd’s Pie
Ingredients
- 1 cup diced carrots and celery I used what was leftover from our vegetable platter!
- ¾ cup corn
- 2 tbsp butter
- 3 cloves garlic, minced
- 2 cups diced turkey whatever you have leftover!
- 1½ cups gravy
- 2 cups mashed potatoes
- salt
- 1 tbsp dried thyme
- paprika
Instructions
- Preheat oven to 350°
- Put carrots and celery into food processor. You need about 1 cup
- Heat a large pan on medium heat. When hot add butter and minced garlic
- Saute until fragrant and then add carrots and celery. Continue to saute for about 2-3 minutes.
- Then add in corn and diced turkey
- Mix altogether and continue cooking for another 1-2 minutes.
- While this is continuing to cook you want to heat up the mashed potatoes. You want them to be warm so they spread over the top of the mixture!
- Add gravy into the turkey mixture
- Spray a 13×9 pan with oil and add in the turkey gravy mixture
- Top with mashed potatoes and sprinkle top with paprika
- Bake for 30 minutes
Notes
I was able to keep the entire recipe in my cast iron pan. If you have one I would definitely do the same. If not follow the recipe to move it into a 13×9 pan!
This is a leftover recipe! If your ingredient measurements aren’t exact it will be ok! You definitely want the gravy to be accurate so it doesn’t get dry in the oven!
