Hearty Instant Pot Sausage and Lentil Soup

Sausage and Lentil Soup

Ingredients
  

  • 1 lb sausage, no casing
  • 1 medium onion
  • 3 large carrots
  • 1 cup lentils, dry
  • 1 tbsp basil,chopped
  • 5 cups chicken broth
  • 1 tbsp avocado oil
  • 3 clove garlic
  • 28 oz diced tomatoes, canned
  • salt and pepper

Instructions
 

  • Set the Instant Pot to Saute mode. Add the sausage and cook, breaking it into small pieces, until browned and cooked through. Drain excess grease if necessary and remove the sausage from the pot.
  • Add avocado oil then the onion, carrots, and garlic to the pot. Sauté for 2-3 minutes until slightly softened and fragrant.
  • Turn off Saute mode. Add the lentils, diced tomatoes (with juices), chicken broth, basil, salt, and pepper
  • Cook on High Pressure for 15 minutes.
  • Let naturally release for 10 minutes then open and enjoy!
