Air Fryer Garlic Thyme Zucchini & Onions

This is one of our favorite summer side dishes! We get fresh zucchini and onions in our weekly CSA so this is always a must make! I did have to convince the boys not to take all the zucchini to give to their Meemaw to make zucchini bread!

I absolutely love using my air fryer to cook veggies. They always come out perfect! If you do not have an air fryer you can totally still make this recipe by either baking them or even throwing it on the grill, especially if you have a griddle top grill!

Air Fryer Garlic Thyme Zucchini & Onions

Equipment

  • 1 Air Fryer

Ingredients
  

  • 2 large zucchini
  • 1 small onion
  • 1 tbsp avocado oil
  • 1/2 tbsp dried thyme
  • 1/2 tsp garlic powder
  • salt

Instructions
 

  • Dice the zucchini
  • Put the zucchini in a large bowl and mix in avocado oil, thyme, garlic powder, and salt
  • Then peel and dice the onion into small pieces
  • Add the onion to the zucchini
  • Preheat air fryer to 400˚
  • When heated cook the veggies for about 15 minutes
