A quick an easy breakfast that stores well! I use this for breakfast meal preps and it is fantastic!
I store my food in glass containers. Pyrex makes great glass meal prep containers which make it super easy to toss it into the microwave at work!
Vegetable Egg Skillet
Ingredients
- 1 lb ground turkey
- 1 cup zucchini, diced
- 1 cup potatoes, diced
- 10 eggs
- 2 cloves garlic
- salt
- 2 tsp avocado oil
Instructions
- Preheat oven to 425 ̊
- Dice the potatoes small. Put them on a lined cookie sheet and mix In 1 tsp avocado oil. Bake in oven until tender.
- On stovetop brown the ground turkey and discard the fat.
- Remove turkey from the pan and add 1 tsp of oil and crushed garlic. Cook until fragrant. Then add the zucchini and saute.
- Add the potatoes to the zucchini and continue to saute for about 2 more minutes then remove from pan.
- In a large bowl scramble the eggs. Cook the eggs In the large pan. Once almost cooked through add the turkey, zucchini, and potatoes back In. Season with salt.
