Arugula Berry Salad With Steak
Ingredients
- 3 cups romaine, chopped
- 1 cup arugula
- 1 cup carrots, shredded
- 1 cup strawberries, diced
- 1/4 cup sliced almonds
- 1 lb sirloin steak
- 1 avocado
- 4 cloves garlic
- 1 tbsp butter
- fresh thyme
Instructions
- Season steak with salt.
- Heat grill pan. When hot add butter or ghee. Smash the garlic and add to pan. Then add fresh thyme. Cook steak about 3-4 minutes on each side. Time will depend on thickness.
- When done remove from heat and let sit.
- While steak Is resting assemble salad. Mix all together.
- Slice steak very thin and Into smaller pieces.
- Serve the salad In each bowl and then top with steak.

Can you believe we are already in August?!? I could probably cry, who am I kidding I totally already did. In case you didn’t already know besides having this amazing site I am also a kindergarten reading specialist. Here in NY we go back to school around the end of August or beginning or September so as you can image we tend to get a little cranky in this house once the calendar hits August.
With that said we also still have 4 more weeks of summer bliss and we will enjoy every second of it. The recipe section of my page is for the members but I wanted to be able to share out some with all of you who have not joined yet. I decided to do this as a recipe of the month. So each month you can come over to my blog and see a new recipe.
This month I am sharing with you one of my absolute favorite salad recipes! It is so fresh and light and works great for lunch or dinner! There is something about throwing in fresh berries that just screams summer to me!
Now if you aren’t a steak person, and yes they do exist, I don’t want you to feel left out. This salad will work beautifully with really any protein. If I had to choose a second favorite here I would definitely go with grilled shrimp. Worry no more though because if you are a grilled chicken type of person than you will love it just the same!
I love serving this salad with a balsamic vinaigrette! You want something light here but that also has some good flavor!
