I am always trying to get vegetables in during each of my meals. Frittata’s are a great way to do that plus they are a perfect meal prep recipe!
One of the main things I look for when meal prepping is to make sure whatever I’m making isn’t going to take me hours in the kitchen. Let’s face it, I don’t have extra hours to spend!
This recipe is perfect because it checks off both my vegetable box plus it doesn’t take all day! All around win!
Vegetable Turkey Frittata
Ingredients
- 4 cloves garlic
- 10 eggs
- 5 ounces cooked ground turkey
- 1 cup cauliflower rice
- 1 cup zucchini, diced
- 1 tbsp avocado oil
- salt
- peppers
Instructions
- Preheat oven to 375˚
- Diced the zucchini and rice the cauliflower. You can also buy the cauliflower already riced! (Look in the veggie section!)
- Scramble the 10 eggs. Add a little salt and pepper to the eggs.
- Heat a nonstick oven safe pan. Add 1 tbsp of oil. Once hot mince 4 cloves of garlic. Saute until fragrant.
- Add vegetables. Season with salt and pepper. Saute until a bit soft.
- Add turkey and mix together
- Add eggs and mix until eggs evenly coat veggies and turkey
- Set the heat to low and cook until it starts to set, then move into the oven for about 16-18 minutes.
