One quick trip to the farmers market will get you this delicious frittata! I absolutely love making frittatas for meal preps because they are easy to throw together and they store well in the fridge!
Bacon Kale Sweet Potato Frittata
An easy breakfast recipe the whole family will love!
Ingredients
- 10 eggs
- 1 large sweet potato
- 1 tsp avocado oil
- 5 slices bacon
- 1 cup chopped kale
Instructions
- Preheat oven to 375 ̊Remove fat from pan. Add about1 tsp of avocado oil and then add diced sweetpotatoes. Saute until almost tender and add In thekale. Continue cooking until the kale Is cooked.
- Add crumbled bacon back In the pan and mix alltogether.
- Add 10 scrambled eggs on top. Mix together so theegg covers all the other Ingredients.
- Let cook on stovetop until the bottom starts to setthen move into the oven.
- Bake until cooked through about 15-20 minutes
