Eggplant Meatballs
Ingredients
- 1 lb ground beef
- 2 cups diced eggplant
- 1/2 cups breadcrumbs
- 2 cloves minced garlic
- 1 egg
- 2 tsp avocado oil
- salt
Instructions
- Preheat oven to 350 ̊. Heat a large pan over medium heat. Add the avocado oil.
- When hot season the eggplant with salt and saute until tender, about 5-7 minutes.
- When tender remove from pan and add to a food processor. Pulse until very finely chopped.
- In a large bowl add ground beef, eggplant and remaining Ingredients. Mix together. Make about 15 meatballs.
- Heat the pan again and brown the meatballs. Once they are browned move the pan Into the oven. Cook the meatballs until cooked through, about 10-15 minutes.

I’m going to be honest here, eggplant is usually not my thing. Then I started getting it in my weekly CSA so I had to figure out something to do with it. Yes, I’m a huge fan of eggplant rolatini but it isn’t something I’m going to make often.
I make chicken meatballs a ton for my kids for their school lunches and I thought what a great way to get in some veggies. I always add a vegetable to their meatball so I decided to try adding the eggplant to my traditional beef meatballs. It was a huge success!
When I first made these I used them as my lunch meal prep and they were so incredibly good. I would be so excited for lunch each day!
These also work so good for dinner! You can serve them with spiralized zucchini noodles, that’s my favorite!
