Whether you are pumpkin obsessed or not this recipe is the perfect meal prep for a fall breakfast! Super easy to make and delicious to heat up quick. I usually make it and then store in glass mason jars. When I get to work I just heat it up quick in the microwave and I’m good to go. Sometimes I don’t even heat it and it is still fantastic!

Instant Pot Pumpkin Spiced Oats
Fall in a jar!
Ingredients
- 1.5 cup steel cut oats
- 3 cups water
- 3/4 cup pumpkin puree
- 1/25 tbsp pumpkin pie spice
- 1 cinnamon stick
- 1/4 tsp cinnamon
- 1 tbsp vanilla extract
- 2 tbsp light brown sugar
- 5 tbsp chopped pecans
Instructions
- Mix together water, pumpkin puree, 1/4 tsp pumpkin pie spice.
- Put oats into instant pot and top with pumpkin mixture. Mix together and add cinnamon stick.
- Cook on high pressure for 6 minutes. Let naturally release for 10 minutes and then release the rest of the pressure.
- Add in 1 tbsp pumpkin pie spice, cinnamon, vanilla extract, and brown sugar.
- Top each serving with 1 tbsp of chopped pecans.
