Simple salad meal preps make me so happy! Whenever I say “meal prep” I can feel the overwhelm from some people. Meal preps do not have to be a huge challenge and I created this one to prove just that!
To assemble this I always make sure that my lettuce is completely dry. After I wash it, I spin it, and then I lay it out flat on paper towels while I’m prepping everything else. I know this adds in a little extra work but you do not want soggy lettuce sitting in the bottom of the jar because you won’t want to eat it after the first day!
I also choose to store the hard boiled eggs separately. This is a personal preference here. I find the egg texture changes a bit when stored with everything else so for me I like it better separate!
As for the dressing, for this one I used a Honey Mustard Vinaigrette. I store my dressing in these little plastic containers I found on Amazon. Then I put the container right into the jar so I don’t forget it!

- 5 cups shredded lettuce
- 2 medium tomatoes
- 5 hard boiled eggs
- 1.5 cup chopped cucumbers
