Lemon Garlic Scallops: A Burst of Flavor in Minutes

I’m always looking for a quick and easy weeknight meal and this is one of my go to recipes! My favorite part of this recipe is that it is just so easy to make. My family does not eat seafood so sadly I’m the only one, which means when I want seafood I need to cook two meals. Normally this is something I won’t do but when I have a recipe this simple it isn’t a big deal!

I added a note at the bottom of the recipe to top it off with some parsley or red pepper flakes. This is a great way to just change up the flavors a bit if you are looking for something a little bit more!

With scallops I normally eat some type of vegetable. My favorite is asparagus. I just love how they pair together.

Lemon Garlic Scallops

Ingredients
  

  • 1.5 lbs sea scallops
  • 1 tbsp butter
  • 2 cloves garlic
  • 1 whole lemon, juiced
  • 1 tsp salt

Instructions
 

  • Prepare the Scallops: Pat the scallops dry with paper towels to remove excess moisture. Season lightly with salt.
  • Heat the Pan: In a large skillet, melt the butter over medium-high heat. Once the butter is fully melted and begins to sizzle, add the minced garlic. Sauté the garlic for about 1 minute until fragrant, being careful not to burn it.
  • Cook the Scallops: Carefully place the scallops in the skillet, ensuring they are not crowded (cook in batches if necessary). Sear the scallops for about 2-3 minutes on each side, or until they develop a golden-brown crust and are cooked through. Avoid moving the scallops around in the pan to allow them to sear properly.
  • Add Lemon Juice: Once the scallops are seared and cooked, reduce the heat to low. Pour the fresh lemon juice over the scallops and gently toss them in the pan to coat evenly. Cook for an additional 1 minute to let the flavors meld together.
  • Serve: Remove the scallops from the pan and transfer them to a serving dish. Drizzle any remaining lemon garlic butter sauce from the pan over the scallops.
  • Enjoy: Serve immediately, garnished with a lemon wedge if desired. These scallops pair perfectly with a light salad, steamed vegetables, or over a bed of pasta.
  • Note: For an extra burst of flavor, you can sprinkle some freshly chopped parsley or add a pinch of red pepper flakes for a hint of heat.
