Meatloaf is an easy go to family favorite. It is also a great recipe to use when you are super short on time. I know that sounds odd because it takes a long time to actually cook but you can cook it the day before and it reheats perfectly!
You can also double the recipe and make 2 and freeze one for another night! That way all you have to do is defrost and reheat. Finding meals that work well for busy nights is an absolute must in my house!
I also use meatloaf for a night when I want to eat seafood. I normally do not cook multiple meals but I’m the only one who likes to eat seafood so I will make my boys and my husband meatloaf and myself some kind of fish and then we will all eat the sides!
Meatloaf
Ingredients
- 2 lb ground beef
- 1/2 cup breadcrumbs
- 1/4 cup ketchup
- 1 egg
- 2 tbsp fresh parsley, chopped
- 3 cloves garlic
- salt
Instructions
- Preheat oven to 375˚
- Mix together all ingredients
- Place on a large baking sheet and form into an even shape
- Bake for about 50-60 minutes or until internal temperature is about 155˚
- Remove from oven and let sit for about 5 minutes before serving
