Bacon Kale Sweet Potato Frittata

Ingredients
  

  • 10 eggs
  • 1 large sweet potato
  • 1 tsp avocado oil
  • 5 slices bacon
  • 1 cup chopped kale

Instructions
 

  • Preheat oven to 375 ĚŠRemove fat from pan. Add about
    1 tsp of avocado oil and then add diced sweet
    potatoes. Saute until almost tender and add In the
    kale. Continue cooking until the kale Is cooked.
  • Add crumbled bacon back In the pan and mix all
    together.
  • Add 10 scrambled eggs on top. Mix together so the
    egg covers all the other Ingredients.
  • Let cook on stovetop until the bottom starts to set
    then move into the oven.
  • Bake until cooked through about 15-20 minutes
