Vegetable Egg Skillet

Ingredients
  

  • 1 lb ground turkey
  • 1 cup zucchini, diced
  • 1 cup potatoes, diced
  • 10 eggs
  • 2 cloves garlic
  • salt
  • 2 tsp avocado oil

Instructions
 

  • Preheat oven to 425 ĚŠ
  • Dice the potatoes small. Put them on a lined cookie sheet and mix In 1 tsp avocado oil. Bake in oven until tender.
  • On stovetop brown the ground turkey and discard the fat.
  • Remove turkey from the pan and add 1 tsp of oil and crushed garlic. Cook until fragrant. Then add the zucchini and saute.
  • Add the potatoes to the zucchini and continue to saute for about 2 more minutes then remove from pan.
  • In a large bowl scramble the eggs. Cook the eggs In the large pan. Once almost cooked through add the turkey, zucchini, and potatoes back In. Season with salt.
